you did that the hard way... especially if you are altering the original image. Since you have fireworks... you should place the image, scale it (while holding shift to hold proportions), then right click on it and choose optimize with fireworks. It opens a dialog box and you hit okay. All done.
The method you used is better fitted for placing a PSD or jpeg file in dreamweaver and then clicking the edit button to actually add items or text to the image. Save the file as the same name as the current jpeg generated by dreamweaver and it will be updated across.
You were concerned with dreamweavers edit options actually altering the image, but that is infact what you did by going into photoshop and then saving out that jpg.

I just discovered these tutorials yesterday and so far I have watched several by Geoff Blake. They are by far the best tutorial videos I have seen. His common sense approach without leaving out even the smallest detail make these videos a joy to watch. They are much better than the Adobe site videos. The Adobe site videos give good info, but they don't explain very well how to get from point A to point B. I guess they think we automatically know what they are talking about and can fill in the blanks ourselves.

Geoff Blake's tutorials are fantastic for a real beginner to explain how to get a Photoshop layout into Dreamweaver. They are easy to follow and make sense.
