Newbie question about document sizing.

I have an adobe illustrator file that's the size of a piece of paper 8.5 x 11. I need to make the image bigger 12" x 12". The standard black frame area that you work in when Illustrator starts- how can I make this bigger? The document setup menu has presets like 8.5 x 11 then legal size and 'tabloid', but nowhere to set the size in inches. The image I'll be sending out to print will be 12 x 12. How do I do this?

To the right of where it says "Letter", there are Width and Height fields where you can enter a custom size in the Document Setup window.
