Once we restarted indesign this problem went away... but check this out.

And limited to letter? What a shame…
That is mighty weird. So these are CS3 bugs we're talking about here? It scares me - since soon I will have to take the mighty jump.
I went to the CS3 conference here in LA and it was pretty impressive, let's hope the dreams are realized.

lol, not just limited to letter, the "paper" list changed according to whatever font was selected.
From my experience, even though CS3 seems to have these weird little bugs, the improvements in the programs outweigh the bugs by far.
Ive never worked this effeciently on some of our bigger projects, but dont tell my boss... ;)

To be honest, it's more than likely a RAM issue on your own machine. Or else you might have too many fonts open. I don't think it was anything to do with InDesign, except for the lack of resources.

5.5 gigs of RAM should be plenty, right? and I use and abuse Suitcase Fusion to keep my font list relatively short, I learned that lesson years before InDesign. Although I do work in a print shop and receive all kinds of crazy files and fonts, stranger things have happened.

Suitcase constantly has it's hands in your system libraries, which is also where your paper sizes reside, especially if you use Auto Activation. Lets blame it on suitcase!
