Is there any one out there using InCopy for text-book setting (or any kind of work)? If not why not? I am interested if it could make my life easier and/or more productive

Does it export as text files? For some reason InDesign doesn't seem to be able to export text files. If InCopy can do that then I could use it. Thanks for the idea.

If you have the type cursor blinking in your text box you can FILE>EXPORT>Rich Text Format.
If it's not in the text box it won't export. But it will only export the story, not the whole text.
There is a script in the Automate panel to export all stories and you select RTF from there too.
I think InCopy is good if clients have it and know how to use it, but word files that are RTF are easily reimported if the styles are maintained.
