I am not sure how to do it but another place to ask would be Tips From the Top Floor (http://tipsfromthetopfloor.com) a great photography site and podcast.

Welcome skipper. I'm wondering, since bridge and photoshop both read the metadata, if there is an action or automate function in either bridge or photoshop that could apply the time stamp for you. or maybe an action or script available in the Adobe Exchange site?
