I don't find a way built in with AICS2 to collect the Illustartor file, any fonts used, and placed images, like you can in Quark or InDesign. Am I overlooking it? Is there a 3rd party solution that works well?

Save the file as PDF. There you can embed whatever you want.

There's a utility called "Scoop" that does this. You can get it here (http://www.worker72a.com/).
