How to seperate a logo?

I am new to Illustrator and so I have a newbie q. How do I seperate a logo and remove the white from the background? Or should I do this in Photoshop?

Adobe Illustrator has no color/White to its background unless you placed your logo over a color. Otherwise it is already transparent.

As Todd points out even though the background appears white it is actually transparent. There is by default an option is set to hide transparency grid. This is found under the View menu. You will see an option to Show Transparency Grid that way you will know what is filled and what is not.
