I hope it is simple.
1.I would like to take a pictures, and make everything black and white except one color.
Is it a simple one click procedure? Or do I have to crop and copy like I've been doing?
2.Also, Is there a way to select something and make the color more intense, like someones eye color?

Not so simple but once you get the hang of it you will be able to do great things.
Live trace your photo (There are many tweak operations you can do via the LT Dialog). Once happy, Expand and then (Group?) and use Live Paint. You can colorize different areas.
As I said you will need a bit of practice but start by learning Live Trace and Live Paint.

Adam Hay covers a few topics in Illustrator at his (now named AppCliic site - look through the monthly archives).

I think there was/is one on live paint to follow on but I did not find it today.

Photo image editing is best done with Photoshop and if you wish to retain a photographic quality to the image, you will have to use it.
