I have been using Ai for a few years now and I have never been able to make a table without making it manually with lines. Can anyone help?

Apparantly you..
1. Create a pattern: draw a rectangle with a stroke and add it to your swatch panel... hum, quick look see says it's far from ideal.
2. Scale the pattern accordingly. Right-click or command-click on Mac, choose scale, and tick the patterns box to size patterns horizontally or vertically within the shapes you create.
I'd create a few rectagles for columns or rows with the pattern applied - and scale the pattern horizontally or vertically to suit. Should give you a variable grid. (Using align -> distribute, to make sure the rectangles butt together). Hope you follow...
Hopefully someone in here knows how you do it properly.

You can:
Create a box. Pull down from Object>Path>Split into grid.

The Rectangular Grid tool creates "tables" (hence the name: rectangular grid)
