Hello,
I am having difficulty making type dial around a path in CS3. See image attached - can anyone help?
I cant even do this around a basic circle. Eventually i would like to do this around a spiral

I don't think you can do that with the type on a path function but you might have luck with my tutorial:

In your case you'd want to use vertical text but the method is the same.
I'm a huge fan of smart guides, so let's turn those on first (View -> Smart Guides or cmd-U). Make sure your guides are visible, too.
Ok, now drag out a circle, and center it (this will be your guide). Drag out a horizontal and vertical guide to the center of the circle.
Now activate your text tool, and on the right side of the circle, type in some dummy text. Deselect, and re-select the text. With the text selected, activate your rotate tool (r). Click the center of your circle (where your guides meet) to activate your pivot point.
Now hold alt/option, and drag downward to drag out a copy of that text on the pivot point. You'll have two lines of text.
With the second line of text selected, hold cmd and press d (duplicate) to create duplicates along the same pivot point until you have as many as you need.
This is the basis of what was done in your sample. Obviously, they just cut off the circle, and decided to add extra lines right there on the baseline.
