I adjusted the hue/saturation of an image to my liking. HOWEVER, I did not take note of how much each was adjusted. Is there a way to view this after the fact? I would IMMENSELY appreciate any help someone can give me!

If the image has been closed, no. It's no crisis - open the unaltered image and the one you like and play with Hue/Saturation until it looks as good - or better…

If your using CS/CS2, do you have the History Log enabled? (via Edit/Preferences/General - towards the bottom with the settings History Log ticked,Both and Detailed)

If you don't have this set, set it as above and restart Photoshop.
