Hello,
I'm feeling more and more comfortable with PS each day. However, I still do not know how to convert a color photo into black & white. I have a Canon Powershot SD450 digital camera that I use for my blog. What I want to know is, once I open the images with PS, is there a way to convert them to black & white? I tried simply clicking grayscale, however it wasn't exactly what I was looking for.
Thanks.

Since you're a photographer, you might like this method:
Put a Hue/Saturation adjustment layer above the photo. Don't adjust anything, click OK and then change the blending mode to Color.
Put another Hue/Saturation adjustment layer above that and turn Saturation all the way down. Your photo now is black and white.
Double click the first adjustment layer and start sliding the Hue around. It is acting, in effect, like a colored lens filter.
This is also a really good way to change only part of a photo into black and white if you use the mask in the adjustment layers…
Good Luck!

OMG.
Try looking up grasyscale in the Help Menu
Can you say "read the manual?"
Sorry, but I'm not sorry.
