I like ITC Stone Serif or ITC Stone Informal a great deal. New Aster and Rotation are also a couple I'll use from time to time.

Default What kind of book?

Is there a kind of genre that needs to be respected? Minion and Caslon are classic fonts, as variations of Garamond, and Times, Bookman etc. (usually old face, century, or antiqua in the name is a good choice)

If you go to major font vendors (linotype, adobe etc) you can search fonts "by use" and see suggestions of fonts for books. Print out some dummy text and see what you like. Kerning, tracking and leading all have a big effect on the legebility and estetic component in the text. Some fonts take much more space than others.
